How it works
Water ratios vary between rice types because of differences in starch structure, bran layer thickness, and grain length: brown rice retains its bran and requires more water and a longer cook time than white rice, while short-grain varieties release more starch and need less water to avoid becoming gluey. The yield ratio captures how much the rice expands as it absorbs water during cooking. A very common mistake is using a 2:1 water-to-rice ratio for all varieties regardless of type; brown rice cooked at 2:1 remains undercooked and crunchy, while short-grain white rice cooked at 2:1 often becomes sticky and waterlogged.

Cooking 2 cups of white long-grain rice
- Look up white long-grain ratio: 2.0 cups water per cup of rice, 3.0× cooked yield.
- Calculate water: 2 cups × 2.0 = 4 cups water.
- Convert to mL: 4 × 236.588 = 946.352, rounded to 946 mL. Cooked yield: 2 × 3.0 = 6 cups.

Common mistakes to avoid
- Using the same 2:1 water-to-rice ratio for all rice types -- jasmine rice typically needs only 1.5:1, and brown rice needs 2.25:1 or more; using 2:1 universally yields mushy jasmine and undercooked brown rice.
- Adding cold water to a pot that already started cooking -- lifting the lid and adding water mid-cook resets the steam environment and produces unevenly cooked, gummy rice.
- Not accounting for rinsing -- washing rice removes excess surface starch, but also absorbs a small amount of water; recipes that assume rinsed rice need slightly less added water than those for unrinsed.
